Moose Tracks Protein Bars
Ingredients
- 1.5 cups Almond Flour
- ½ cup Scho Fit Nutrition Vanilla Protein Powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup applesauce *or 1 banana mashed
- 1/2 cup Date syrup or 1/2 cup honey
- 1 teaspoon Vanilla Extract
- 2 large eggs
- 3/4 cup cacao nibs *72% cacao
- 1/3 cup peanut butter warmed
Instructions
Preheat your oven to 350 degrees
Cream applesauce, date syrup, vanilla, and eggs in a medium-sized mixing bowl.
In a separate bowl, stir flour with salt and baking soda and protein powder.
Add the flour mixture into the giant bowl to make the cookie dough.
Fold Mini Cacao Chips into batter.
Line your baking dish with parchment paper. Drop dough onto the baking sheet and spread it out to fill the entire thing.
Microwave the peanut butter and pour it randomly on top of the cookie bars. Use a toothpick to swirl it around in the cookie dough.
Bake cookie bars in the oven for 20 minutes. **baking time may vary at altitude
Remove from oven, let cool, and serve once they have reached room temperature
