Creamy and Hearty White Chicken Chili for Cozy Nights
Ingredients:
2 boneless, skinless chicken breasts
1 can (15 oz) white beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (4 oz) diced green chilies
1 onion, chopped
3 cloves garlic, minced
2 cups chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon oregano
Salt and pepper to taste
1 cup vegan cream *** See Recipe Below for Vegan Cream
1/2 cup cilantro, chopped (for garnish)
Lime wedges (for serving)
Directions:
Place the chicken breasts at the bottom of the crockpot.
Add the white beans, corn, diced green chilies, chopped onion, and minced garlic on top of the chicken.
Pour in the chicken broth and sprinkle the cumin, chili powder, oregano, salt, and pepper over the mixture.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
Stir in the heavy cream and let it cook for an additional 15-20 minutes on low to heat through.
Serve hot, garnished with chopped cilantro and lime wedges on the side.

Ingredients
- 1 1/2 cups raw cashews
- 1 1/2 cups water
Instructions
- Bring 3 cups of water to a boil. Pour the hot water over the cashews and let soak for at least 5 minutes, or up to 3 hours.
- Drain the cashews and discard the soaking water. Add them to a high powered blender along with 1 1/2 cups of fresh water and blend for a few minutes until very smooth and creamy.
- Use immediately anywhere you would heavy cream, or store in a covered container in the refrigerator until ready to use. It will keep in the refrigerator for about 1 week.
