This Flourless Banana Bread is a gluten-free, naturally sweetened, and healthy alternative to traditional banana bread.
Ingredients (Serves 8-10)
3 large ripe bananas (mashed)
2 ½ cups rolled oats (or 1 ¾ cups almond flour for a grain-free version)
**Add protein: use ½ cup Scho Fit Nutrition Protein Powder in place of ½ cup either form or natural flour. Use Vanilla.
2 large eggs (or flax eggs for vegan)
⅓ cup date syrup syrup (optional, for extra sweetness)
Since this flourless banana bread uses oats (or almond flour), it will be denser and more moist than a traditional loaf. Here’s how you can bake it:
Pan size
- Use a 9x5-inch loaf pan (standard banana bread pan).
- If you prefer a thicker loaf, you can use an 8x4-inch pan, but baking time will be a bit longer.
Baking directions
- Preheat oven to 350°F (175°C).
- Lightly grease your loaf pan, or line it with parchment paper for easy removal.
- Mash bananas in a large bowl.
- Blend oats in a blender or food processor until they resemble flour (unless using almond flour).
- Add eggs (or flax eggs), date syrup, and oat/almond flour to bananas. Stir until combined.
- Optional add-ins: 1 tsp cinnamon, 1 tsp vanilla extract, ½ tsp baking soda, ¼ cup chopped nuts or chocolate chips.
- Pour batter into prepared pan. Smooth the top with a spatula.
- Bake for 45–55 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
