Delicious Crustless Spinach and Feta Quiche for Brunch
Ingredients:
4 large eggs
1 cup fresh spinach, chopped
1/2 cup red onion, finely chopped
1/2 cup feta cheese, crumbled
1/2 cup non dairy milk - unsweetened
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil (for sautéing)
Fresh parsley or thyme (optional, for garnish)
Instructions:
- Preheat the oven to 375°F (190°C).
- Sauté the vegetables: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped red onion and sauté for about 2-3 minutes until softened. Add the chopped spinach and cook for another 1-2 minutes until wilted. Remove from heat and set aside to cool slightly.
- Prepare the egg mixture: In a large bowl, whisk together the eggs, milk (or cream), garlic powder, salt, and black pepper until well combined.
- Combine the ingredients: Add the sautéed spinach and onion mixture to the egg mixture. Stir in the crumbled feta cheese.
- Pour into a baking dish: Lightly grease a pie dish, quiche dish, or any round baking dish. Pour the egg, spinach, and feta mixture into the dish.
- Bake: Place the quiche in the preheated oven and bake for 30-35 minutes, or until the center is set and a knife or toothpick inserted into the center comes out clean. The quiche should be lightly golden on top.
- Garnish and serve: Let the quiche cool for a few minutes before slicing. Optionally, garnish with fresh parsley or thyme before serving.
Tips:
- Baking Time: The quiche will vary in cooking time depending on the depth of the baking dish used. If your dish is shallow, it might cook faster; if it’s deep, it may take longer.
- Texture: If you prefer a creamier texture, you can use cream instead of milk.
